Well, what is it like?

Blogging huh?  I don't know.  I think I am about to find out.  Kateena and I have been threatening to start a blog for almost a year now and I am taking this one head on.  I imagine she will blog here- which I thought may be kind of neat to hear from both of us.  Both Kateena and I are stay at home mom's with husbands who work hard in the restaurant business.  We both had premature children whose early arrivals had lasting effects on them both.   Like their mom's they both have so much in common it's hard for them not to be like "peas and carrots".


Cooking is not my strong point, but like this blog I am working on it.  I just called Kateena and asked what was the recipe for the bacon wrapped goodness I had at her house last week.  I got the measurements in terms of cupped handfuls.  Hmmmm.  Here goes. Chicken wrapped bacon-need to think of a cute recipe name for that- and blogging.  This will be be interesting and I am sure she will call and ask " Well, what is it like?"  Here goes.

  1. Well the follow was good. I am actually very pleased. I would post a pic but really who cares after the fact. I would post the recipe, but it is Kat's to give out. You all, and by that I mean you two, will have to take my word that it was good.

  2. Ok I need the recipe for the chicken wrapped in bacon. It looks too good. I hope we get recipes now and then for some of these items that sound absolutely delicious.

  3. Hey Ann, I talked to Kateena and she is willing to share her recipe. So here goes.... Your main measuring device in this recipe is your cupped hand. Yea, that's how I reacted too when she said.

    I start out with a package of chicken breasts, cut each one into 4 equal chunks and 1/2 package of your favorite bacon ( I simply cut the whole package in half and use the left over half for salads or BLTs during the week)

    In a small bowl combine the following:
    1/2 cupped hand of Kosher salt
    1 cupped hand onion powder
    1 cupped hand garlic powder
    1 1/2 cupped hand seasoning salt (we use Lawry's)
    3 to 4 good shakes of chili powder
    2 shakes of black pepper
    2 tablespoons of brown sugar

    mix this all until it is well combined and then coat the chicken chunks.
    Wrap each chicken chunk in one slice of your bacon. Place on a foil lined cookie sheet (because who the heck wants to clean up bacon and chicken juice?)
    Let the chicken rest for 15 minutes or so while you pre heat your oven to 400.

    Bake in the 400 oven for 30-35 minutes.
